English Toffee


My girls say I make the best English Toffee ever. The truth is that they probably have never had any other English Toffee. I got the recipe from the mother of a student who gifted me with a share of the toffee in a coffee mug one Christmas. It's quite simple to make, why don't you give it a try?



English Toffee



  • 1# real butter

  • 2 1/4 C sugar

  • 6 oz sliced almonds (about 2 cups) save out 1 oz and chop finely for topping

  • 1 large (8 oz) plain Hershey bar (5 1/2 small bars)*

In heavy aluminum pan put butter and sugar. Place over medium high heat & stir constantly. When mixture pulls away from sides of pan add almonds. Keep cooking & stirring until it becomes the color of coffee with cream in it & "sniffs" as thought the almonds were beginning to scorch (about 12 minutes). Remove from heat immediately and pour quickly onto large cookie sheet with sides. Spread with spatula. Place the broken chocolate around the top. Spread as it melts. Finally, sprinkle with chopped almonds. Let cool. Break into pieces with a knife and enjoy!

*Break chocolate before you get started.

New Background

Well, I finally got a new background to show on this blog. Unfortunately, the days between now and Christmas are limited.

Today is Stephanie's 25th birthday. I can't believe that it was so long ago that she was born. I went to see her at her work today, the ICU at Guadalupe Valley Regional Hospital. We visited for a few minutes then I went of to Hobby Lobby in New Braunfels. A craft project (or two) awaits!

Snow!

Well, the weatherman promised and he delivered! We had snow today! Well, it was really ice crystals with a little snow mixed in, but don't think you could have told the kids at school otherwise! We went out for about 30 minutes and it was fun, but cold! Tonight we will make a trip to Hobby Lobby (I've got my list made) to get supplies for making Christmas cards.

Cold

Well, it doesn't look like the weather will warm up by Saturday morning, so our hangar party is postponed. So now I'll have to focus my attention on getting those Christmas cards made. I found some nice Christmas clip art but I need to decide what size I want it before I make a copy to carve from. Then there's the paper...guess a trip to Hobby Lobby is in order. I'm thinking dark blue background, image stamped in black on white vellum and perhaps a tiny gold bow to give it some sparkle...what do you think?

December again?

It seems that December is my month for posting. It would be nice if I would post more regularly, right?

Two more days of school this week, then our big hangar party. If it happens. The weather is chillier than we had expected and if it looks like it is going to be too cold we are going to cancel. We'll make a decision tonight when we watch the weather on the news.

I've found some really nice clip art and have the urge to make a Christmas stamp, so if we don't have the party I'll spend Saturday making Christmas cards.
